The last line here is the ultimate: " I win." That alone describes his mindset. For almost ayear he has had the engagement ring Edward planned to give Bella locked in a safe - a sort of physical trophy he can take out and measure himself by. Bella is an obsession/prize to be won in Emmett's eyes. He saw her and decided he wanted her. If he'd managed to break up her & Edward's relationship in college, he would have quickly lost interest and moved on. The fact that she was unattainable just fueled his obsession.
I promise Bella does get a happy ending, but its going to be a bumpy ride getting there.
